During the spring months, for example, our menus spotlight the vibrant greens, tender asparagus and fresh herbs of the season. Students in our spring cooking classes might learn to make a creamy nettle and wild garlic soup, followed by a quinoa salad with roasted beets, toasted walnuts and a zesty lemon-herb dressing. As they chop, sauté and assemble these seasonal dishes, participants also gain valuable insights on menu planning, food sourcing and nutritious cooking techniques.
